Inspired by the Maple Nut Granola from Seven Secrets Cookbook
1/3 cup frozen orange concentrate + water to bring up to ¾ cup
¼ cup honey
2 T molasses
2 tsp. vanilla
2-3 T orange zest
1 tsp salt
1 ½ cup pitted dates
1 cup walnuts or other nuts
13 cups old fashioned oats
2 cups coconut chip natural (large)
2 cups sliced almonds
Whiz up the first 8 ingredients in a blender. Pour over the oats, coconut and almonds and mix until well coated with the wet mixture. (using food handling gloves would make this job easier) Place oat mixture on two large cookie sheets to bake in the oven.
Bake at 175 degrees for 8 hours. This does not need stirring at this temperature.
For a holiday treat serve with dried cranberries to add some color.
