Gingerbread w/ Upside Down Cake Topping

Note - Prepare pan with topping first

Upside Down Cake Topping

This can be used for any cake recipe:

  • 1/3 cup vegan Butter
  • 1/3 cup Brown Sugar
  • 1/2 cup chopped walnuts (best you can buy)
  • I/2 cup dried fruit (raisins, cranberries, cherries, etc.)

Heat over medium heat until just bubbling.

Pour into pan, layered with parchment paper (bottom and sides – makes for easy cleanup)

Spread out until entire bottom of pan is covered

Ready for putting in batter over the top of topping.

 

Gingerbread with Upside Down Topping

Adding apples and dates adds moisture to this recipe.

  • 2/3 cup vegan butter
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 to 3 tsps. ginger depends if you like more
