These delicious cookies are easy to make and are so good for you.  Very high in omega-3, they are made without butter and eggs.  Maple syrup adds a delicious touch of natural sweetness and replaces all the sugar found in most cookies.  Enjoy!

2 ½ C   Walnuts ground finely

2/3 C   Whole Wheat Pastry Flour

1 tsp.   Salt

1/3 C   Flaxseed meal

1/3 C   Carob chips

½ C      Maple Syrup, + 2 Tbsp.

2 tsp.   Vanilla

  1.  In a small bowl add all the ingredients in the given order.  Mis well.
  2.  Spray a large cookie sheet and preheat the oven to 350 degrees.
  3.  Drop dough on cookie sheet with a spoon and flatten with a fork.
  4.  Bake for 10 to 15 minutes or until golden brown, checking often to prevent burning.
  5.  Let cool before removing from the cookie sheet to avoid crumbling.

Makes approximately 1 dozen.
