Creamy Chipotle Pasta

Ingredients:
1/4 cup almond milk
1 chipotle pepper in adobo
1 clove garlic
½ cup tomato, fire roasted
1 tbsp lemon juice
Salt and pepper to taste
2 tbsp Wayfair cheddar
½ lb spaghetti
1 tbsp cilantro chopped
Lime wedges
Preparation:
Boil pasta according to instructions on the package and when ready, drain.
Place in warm skillet.
Place all ingredients (except Wayfair Cheddar, cilantro, and lime wedges) in a blender and process until smooth.
Pour sauce over spaghetti and heat thoroughly, mixing the sauce and the noodles.
Add Wayfair cheddar and take pan off heat.
Sprinkle cilantro over noodles.
To serve:
After serving squeeze lime over noodles and enjoy!
Optional:
I add chopped fresh salsa veggies as well for a fresh taste on the noodles
