Lentil Patties

Ingredients:
1 cup |
Cooked Lentils, drained |
1/2 cup |
Bread Crumbs (I use Italian Bread Crumbs) |
1/2 cup |
onion, finely chopped |
1/2 cup |
red pepper, finely chopped |
1/2 cup |
cilantro leaves, finely chopped or 1 TBSP dried cilantro |
1/2 cup |
toasted walnuts, finely chopped (optional) |
1/2 tsp. |
garlic powder |
1/2 TBSP. |
dried parsley |
1/2 tsp. |
dried basil |
1/2 tsp. |
dried thyme |
1/2 tsp. |
marjoram or oregano |

Salt to Taste |
1 |
flax egg* or lightly beaten egg |
3 TBSP. |
Olive Oil to fry patties or cooking spray to cook on a griddle at 350 degrees |
Directions:
1. Mix all ingredients but oil in a bowl.
2. Place half of mixture in a food processor and process until it has a paste consistency. Combine with other half of mixture.
3. Use a 1/4 cup to divide the mixture. Using your hands or a regular size canning lid and ring sprayed with cooking spray to form disks about 3 inches I diameter.
4. Heat the oil in a skillet over medium heat. Cook the patties for 3 minutes on each side or until golden brown.
5. Serve with a dollop of Tzatziki sauce or marinara sauce and a nice green salad or any green vegetable.
Recipe Note:
Flax Egg: Mix 1 Tablespoon ground golden flax and 2 ½ Tablespoons of water.
Let it stand for 5-10 minutes.
