Tamale Pie

1 1/2 cups


1 can 14oz.

diced tomatoes (with juice)


large onion

1 can 15oz.

whole kernel corn (with juice)

2 teaspoon


1 2/3 cups

yellow corn meal

1 teaspoon

garlic powder

1 4 oz. can

Ortega’s diced green chilies

1 can

whole pitted olives




  1. Blend: water, onion, garlic and salt together in a blender and set aside.
  2. Combine: oil, tomatoes, corn, chilies and corn meal in a pot. Cook mixture until thickened, stirring occasionally.
  3. Add the blended ingredients to the cornmeal mixture and stir.
  4. Add the olives and stir.
  5. Pour mixture into an oiled 9x13 casserole dish and bake for an hour at 350°.



Notes - I sometimes add a can of black beans (rinsed) or a can of vegeburger.


         Sometimes I blend a clove of garlic with the onions instead of garlic powder.
