Valarie’s Easy Stuffing

Ingredients:

  • 1 10-ounce box Mrs. Cubbison’s Cube Stuffing
  • 3 cups Mrs. Cubbison’s Corn Bread Stuffing
  • ½ cup or stick of Earth Balance vegan buttery stick (divided)
  • 1 large onion, finely chopped
  • 3 large stalks celery, finely chopped
  • 1 apple, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoon poultry seasoning
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 1/2 tablespoons McKay’s Chicken Style Seasoning
  • 2 cups vegetable broth or vegetable stock

 

Directions:

  1. Sauté onion and celery in 3 tablespoons vegan butter until onion is translucent. Add in the garlic, parsley, poultry seasoning, and thyme for an additional 2 minutes. Melt balance of buttery stick (5 tablespoons).
  2. In a large bowl, mix together the butter, apple, cube and corn bread stuffing, salt, black pepper and sauté mix. Sprinkle McKay’s seasoning over mixture.
  3. Add vegetable both until the bread is just saturated – not too wet and not dry.
  4. Bake at 375-degree F for 30-40 minutes or until top is golden and crunchy. Serve warm.
