Christmas Salad

1 medium jicama

1 English cucumber

1 bunch of fresh mint

1 lemon (juiced)

Seeds from 2-3 pomegranates

 

Peel and chop jicama into small pieces; chop cucumber into similar size.

Finely chop fresh mint.  Remove seeds from pomegranates.  Place all ingredients in bowl.  Squeeze lemon juice over top and toss together.
