Tofu Sandwich Spread

1 14 oz package of firm or extra-firm Tofu – press between paper towel sheets to squeeze out water. Then crumble into a large bowl with your hands.
Heat 1 Tbsp. of olive oil in a frying pan.
1 medium onion – minced. Fry until transparent. (Can use onion powder instead.)
Add the crumbled tofu and:
1/4 to 3/4 tsp turmeric
1/4 tsp garlic powder
1 to 1.5 Tbsp. Nutritional Yeast Flakes
1/2 tsp. (or to taste) Chicken Seasoning
1 Tbsp. fresh cilantro
1/4 tsp. paprika
1 Tbsp. vegan mayonnaise
Continue to fry together the above ingredients for several more minutes. At this point you can use this as Scrambled Tofu and serve with toast as a breakfast item.
After the Tofu has cooled, add more mayonnaise and – if desired – a bit of Dijon mustard. Can also add chopped celery at this point. Stir together until mixed well, then spread on bread slices. Can also garnish with lettuce and tomatoes to make an attractive, nutritious sandwich.
Instead of a sandwich filling, this recipe could be used as a filling in a tortilla wrap for variety.
