1. Combine all ingredients in a high-speed blender and blend until smooth. Taste and adjust any seasoning.
2. Store in the refrigerator until ready use. Any leftover dressing should be stored in an airtight container in the refrigerator for up to 5-6 days.
This recipe can easily be cut in half.
Delicious on any salad, taco, tostada, flautas or enchiladas.
