Chipotle Black Bean Dip
1. Heat 2 tablespoons oil in a medium skillet over medium heat. Add the onion and cook until softened, about 3 minutes. Stir in garlic, cumin and coriander and cook for 30 seconds more. Set aside to cool slightly.
2. Put onion mix, beans, cilantro, lime juice, chipotle, salt, pepper, remaining olive oil (1 tablespoon), and water in a food processor. Process until smooth. Transfer to a serving bowl, garnish with more chopped cilantro and serve
