Plantains with Sour Cream
(Platanos con crema)
4 Plantain (ripe)
16 ounces of Wayfair dairy free sour cream
Carob Chips (optional)
Vegetable or Coconut Oil
- Cut plantains in 3 or 4 pieces.
- Slice plantain pieces and fry them slightly on both sides in vegetable or coconut oil.
- Wash and chop strawberries into small pieces. (You can also use peaches, blueberries, raspberries, etc. instead).
- Place fried plantain in a small bowl with sour cream, strawberries, nuts of your choice, carob or chocolate chips and maple syrup.
- Serve warm or cold.
