Delicious Tomato Soup

From the kitchen of Darlene Winter

 

 

2 Large cans of Canned Tomatoes

1 Can of Coconut Milk

1 Large Onion chopped finely

3-4 cloves of Garlic crushed

¼ C Fresh Basil

Salt and Pepper to taste.

 

Sauté the onion in a little olive oil. 

Add the salt, garlic and basil and sauté together.

Add the tomatoes and coconut milk and cook for about 30 minutes until bubbling.

Blend well with a hand blender

 

Serve with Garlic Bread and/or fresh vegetable salad.
