Oven-Roasted Spiced Carrots

Ingredients:

  • 2 pounds baby carrots
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • Dash ground cloves (optional)
  • Dash cayenne pepper (optional)

Directions:

  1. Preheat oven to 400 F degrees. Put all the ingredients in a gallon plastic bag and seal. Toss to coat.
  2. Arrange carrots in a single layer in a 15x10x1 baking pan sprayed with cooking spray. Roast 25-30 minutes or until lightly browned and crisp-tender, stirring occasionally.
