Oven-Roasted Spiced Carrots

Ingredients:
- 2 pounds baby carrots
- 3 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon ground coriander
- ½ teaspoon ground cumin
- ½ teaspoon black pepper
- ¼ teaspoon paprika
- ¼ teaspoon cinnamon
- 1/8 teaspoon ground ginger
- Dash ground cloves (optional)
- Dash cayenne pepper (optional)
Directions:
- Preheat oven to 400 F degrees. Put all the ingredients in a gallon plastic bag and seal. Toss to coat.
- Arrange carrots in a single layer in a 15x10x1 baking pan sprayed with cooking spray. Roast 25-30 minutes or until lightly browned and crisp-tender, stirring occasionally.
