Tofu in Peanut Butter Sauce

Ingredients:

 

1 can

Coconut milk

2 tablespoons

Braggs Liquid Aminos

1 tablespoon

Plumb Sauce or jam

1/2 cup

Peanut Butter

1/4 cup

Sweet Red Thai Chili Sauce

6 cloves

garlic, chopped

1

1-inch piece fresh ginger, finely chopped

1/2 teaspoon

Turmeric

1

1-pound Tofu, drained and pressed, cut in cubes

6 cups

Fresh Spinach

Plus

Fresh Bean Sprouts

 

 

Directions:

 

1.      Blend coconut milk, liquid aminos, plumb sauce, peanut butter, and chili sauce into a sauce. Heat on stove.

 

2.      Brown cubed tofu with garlic and ginger, sprinkle with turmeric.

 

3.      Place spinach in serving dish and top with tofu.

 

4.      Pour sauce on top and place fresh bean sprouts on top to garnish.
