Vegetarian Ceviche

Ingredients:

1 large head of cauliflower, chopped very fine

8 Roma tomatoes, chopped

1 medium onion, chopped

1 bunch cilantro, chopped

5 limes, juiced

1 teaspoon salt (to your taste)

5 jalapeno peppers, chopped

 

Directions:

Mix all the ingredients and serve. If you chill the mixture for awhile it tastes even better!

Serve on top of tostadas.
